I have done it all over the years, from bivy sack to hammock, to 2 man tent, to giant tent, to roof top to inside sleep platforms and truck campers.
The current setup is a poptop van, I love that I can spin the seats around and sleep on the floor with the top down if I need to stealth to poptop...
You could do the western end of the North rim, come in from Mesquite or St George and go down to Twin Point or something like that.

I love my Frontrunner original design table, I have seen the new ones in person but the basic old one has been on 3 different rigs and gets abused as a food table, welding table, field repair bench and more.
I love my original Front Runner stainless table, it has been on 3 rigs and worked amazingly well from cooking to field parts repair.
I have not used the newer design but if mine ever dies I will go to a cabinet shop and have them bend me some stainless and have a buddy weld some aluminum tubing...
