I think your best bet will be to use an offroad trailer so you can keep your tow rig at a reasonable size and store your gear in the trailer. You'd be surprised how well some of those smaller offroad trailers tow in the rough stuff.
With the big dogs and kids I would suggest a decent ground...

The Goodyear Duratracs do have the snowflake symbol and are a favourite tire around here.
EDIT: But, these are all-terrain tires. You won't see a mud tire that is rated for snow... at least not that I'm aware of.

We managed to acquire 1 of the 2 firepits and we have a bit of wood that we brought.
Cleaned up the beer bottles in the firepit and picked up a discarded water bottle.... Other than that it's pretty clean.

I'm saying having ABS still active when you are offroad is downright dangerous.
You don't have to be going fast to need to use the brakes and have them work. My example above was just 1 on-road example and my point was to be able to bleed more speed off prior to impact would have been nice...
ABS increases stopping distance. Period.
It's designed to maintain steering ability when the wheels lock up.
You should NOT have ABS when you are on gravel or sand or pretty much any other offroad scenario.
You need the wheels to lock up to push a mound of dirt ahead of you to stop...

I'm sure a standard 4x4 fridge (many options) can handle it for a bit... it all depends on how much abuse and how exposed it is I guess.
I know my fridge (ARB) didn't like being cold. I used it in the back of the FJ in the winter for a long drive and the thermostat got confused and didn't cool...
