You can remove the plastic trim behind the rear bench seat, and you will almost double your storage space. When I had my Tacoma, that’s where I kept most of my emergency supplies, with tools in a bed tool box.

I can tell you it’s getting close to the 20’s in Big Bend at night right now. So far it’s been a cold fall for Texas. Big bend is amazing but if you’re hoping for warmer temps, you may need to go a bit farther south. Gulf Coast, or Florida would be my suggestions for the temps you’re talking about.
