I use some scissor jack style stabilizers, and don't seem to have this problem. Are you opposed to changing the type of stabilizers that you use? What's the distance between the bottom of the frame, and the ground?
It’s 17” from the bottom of the chassis to the ground. Yes I would change them - maybe not right now- I’ve been scratching my head about these stabilisers for a while- it’s a job to know how they will work till you have them. I was thinking about using caravan style ones on the front and mounting them inboard of the chassis-

This is the other type I was thinking of trying,if I can mount them where they can’t be seen too much and drill a hole through the chassis to work the nut they could be a solution

Got the chassis operational with the road lights and brakes working- took her for a short spin on the road and the handling seems to be great!

My fridge box is painted and mounted up,with the slider installed. The slider and its raised mounting takes up a fair bit of room,which is wasted space really,I’m not overly happy with this but its the way it is now, the way my door works means it has to be this way- i have lost 4.5 “ off the useable height of my box,its ok as i will use a smaller fridge. Worth remembering if you are building something similar though.

Looks good! Unfortunately, with the locking slides, this is part for the course. The only way around that is to make the platform flush with the bottom, so the fridge sits inside the outer frame.
