  • 1 stick of butter
  • 2 pound smoked sausage, cut into ¼-inch thick slices
  • 1 large onion, chopped
  • 1 chopped green bell pepper
  • 1 chopped red bell pepper
  • 2 cup chopped celery
  • Cajun seasoning, to taste
  • 1 cup uncooked white rice
  • 3 large diced tomatoes, with juice
  • 4 cloves garlic diced
  • 2 cups chicken broth
  • 1 pound peeled and deveined medium shrimp
  • salt and pepper to taste
  • tobasco to taste
Put all ingredients in the Dutch oven and add water as needed. Place on the coals with coals on the lid. Add shrimp in the last 10 minutes of the Cook. Takes about 1 hour.

Made a version very close to this on a trip over the weekend. We sautéed the onion, garlic and veggies first. Then sausage. Used a can of chopped tomatoes w/juice instead of fresh. It all barely fit in a 10" oven. It turned out awesome! I highly recommend it.

Can I ask...what size of dutch oven will this fill up? I have a smaller Snow Peak dutch oven and am trying to adapt the volumes of larger ovens to fit.

Sounds very tasteful. Substituting for the shrimp, beef, pork and chicken will work also. Whats great is that in a bowl, or a wrap, people will love it. The only reason I would substitute, is that you can not cook out spoiling fish, unlike other meats that are marginal. If you have a fridge/freezer, this will be less of a concern, over us using just a cooler in the summer.
I love the ingredient list. My kind of spices.....mmm
