I'd get rid the P rated street tires and get something stronger for off road use. There are lift kits available for the Ridgeline. A bed rack for a RTT .
Perhaps airbags in the rear for the extra weight of a RTT and camping stuff.

Up to the individual on what they want to spend and the associated value of their cargo. Harbor Freight makes some good straps. A large spare tire tire would be better secured with a large ratchet straps than with a smaller Frontrunner strap .
First, I'd make sure that the adults always carry bear spray and the children and the dog not allowed to wander out of sight . The kids could all get a small air horn they could use for signaling and for possible bear protection.
