It's a great trip. me and a friend took the Traverse coming back from Expo East to Alabama last year and this year we are going to take it going up, leaving on the Monday before and take 3 or so days to get up to Asheville to OEE.
I have the Vector Offroad Mount bar in my Wrangler JKU and a Ram X mount for my phone and their TabTight on a short dual jointed arm with u bolt clamp for handlebars holding it in place. The Tabtight Ram mount is designed for the tablet even with a ruggedized case on it. Does not move at all.

Me and a friend took it back from OEE last year and the culvert was the only challenging part, but it wasn't that bad. His 80 series and my Jeep were both on 35s and handled it without an issue. This year we are going to go West to East and take it on our way to OEE.
I have the Apollointech for my switch pod and accessories connectivity, I too plan on going the route of the Genesis system for my dual battery, I haven't done it yet though.
My Samsung Galaxy Tab s3 just came in and planning on using it in a couple weeks on a camping trip. From just playing with the software on the tablet with it sitting in the front seat till my mount comes in it's pretty nice.
