You download/cache GAIA maps when you have wifi. Then when you get out in the field, your tablet's GPS will position you on the Gaia maps you previously downloaded. This is why choosing a tablet that has GPS is crucial.
Los Padres National Forest, which includes one of the most scenic drives in the world through hwy. 1 Big Sur. Search up Prewitt Ridge and Coast Ridge Rd. Be sure to see if hwy. 1 has closures, it wouldn't hurt to check the NF website also. Many nice spots to be had
Mormon Emigrant Trail is the go-to for a lot of Bay Area sno' runs. It's about 3.5 hrs from me on the Peninsula. It gets crowded and you have to stay on MET and not take side trails, it does get patrolled.
Bowman Lake road near Tahoe is also legal.

Does BCN have map layers like Gaia? Map layers is one of the most useful features IMO. I use a base map, say a National Forest motor vehicle map, and then add a shaded terrain elevation layer on top of that. Seeing forest routes with terrain/elevation works well .

I'm trying to imagine how you break a rear axle in Dedeckera canyon. Maybe something in the rear was compromised already and the light 4wheeling in Dedeckera exposed the weakness?
I'm not sure anyone in the history of overlanding has ever said having a locking diff is a waste. People weigh the cost of adding lockers against their needs and budgets, but if money was no object, I'd imagine anyone would like to have lockers.
But I hear you're not trying to add lockers, so...
I don't think there's a right or wrong way to go but going: Saline Valley > Saline Valley Hot Springs > over Steele Pass > through Dedeckera Canyon > To Eureka Valley Sand Dune is almost entirely on dirt, more challenging, more remote, more fun IMO.
I've carried two 3-gallon Roto's on my roof for many trips through many altitude and temperature changes. The trick is to tighten the heck of of the spouts; I use a cresecent wrench to tighten the spouts. The Roto's do swell and expand but I've never had a leak.

I've driven Lee Vining up over Tioga pass numerous times, but never really paid attention to mileages. My best estimate is:
LV to Tioga Pass gate/entrance to Yosemite: 20 minutes or 15 miles
Tioga pass to Tenaya Lake: another 20 miles or 25 minutes
Total time from LV to Tenaya Lake: 35 miles...
