Solar charge controllers are only $30, sometimes less on ebay, it will eliminate lots of real problems and prevent potential problems.
My co worker that is into solar for overlanding is slowly tweaking his system. Right now he has a pair of 100 watt solar panels for when he is parked. He also...
Grew up using one of the 5 gal blue water containers with a proper brass house bibb fitting and a 5 ft garden hose but for my trips now I also bring a 3 gallon pump sprayer with the mist nozzle cut off. If I don't take the trailer I find the pump sprayer has a much smaller footprint in the jeep...
Cheapo Exide class 27 deep cycle. I was running the dual purpose but kept having to replace them every two years with heavy and regular use. The new one is a proper deep cycle, 105 amps @ 20 hr capacity.

I second adding storage instead of chopping it down. My plan had also been to chop the tongue down on this boat trailer but instead I used the spare parts for a front deck.
I've got half a spacer lift kit in my jeep patriot so that it rides level when fully loaded.
As for the two lifts you included, it says the 4" lift is a 2" suspension and 2" subframe (body) lift.
I'll be doing trips to Matagorda once the water warms up and also considering poking around PINS this year.

If you've got a tractor supply near by, they usually have a wheel that bolts onto the leg in the trailer section. These can also be found online pretty easy.
