    Not a bad plan. I've also heard of folks running a small and a larger bottle jack for the above reasons. The shorter one gets in low spots, the larger one gets the truck high enough.

    Why are you making this more complicated than it needs to be? Toss the worn out OEM bottle jack in the trash and get a new one that is taller and rated higher . Toss a couple of planks in with it and done.

    I would look towards strip built canoes and kayaks for info. Your idea is solid, with the exception that the epoxy resin has no UV resistance, so you would need to cover in either paint or a marine grade varnish that has a UV blocker.
