I am planning to attend overlanding expo west in September 2021.
I only have time for one day.

Looking for recommendations on what day to choose Fri, Saturday or Sunday.

All thoughts appreciated.

Luis - the best thing to do is check the seminars, workshops, and presentations schedule and pick the day that looks most interesting. There is SO much to do and see at Expo, and if you choose to do a workshop or two, leave time before, between, and after for wandering around to the booths and to gawk at rigs camped.

To that end; checking out other's rigs, sometimes Sat is best, because some folks are still rolling in on Fri and some start heading out on Sun. Also means that Saturdays are usually busiest with foot traffic and parking.
