Not sure if it is alright to post links to other pages. I have a full, running build thread on Expedition Portal - in Fullsize, and in pop-top campers.
Very cool set up, I love the utility bed for storage.

I'm not sure that I agree with you here. If the truck were a manual, or would remain a pavement princess, then sure, leave the 3:73 highway gears on. My truck is an automatic. I'll take all the mechanical advantage I can get. Using the tire size calculator here https://tiresize.com/calculator/
My Ram came with 265/70/17 which equals 31.6/10.4/17.
Lets round that to a 32" tire. My truck came with 3:73 gears from the factory. after going to 35s I was outside the optimal power ban, and I could feel it. Re-gearing to 4:11 is a no brainer to me as it puts me damn near back into the RPM range that the truck was designed to run at. Especially since I plan overlanding and running trails while I'm at it. Hell, I almost went to 4:56 gears, but decided I'd keep some fuel economy too.

I have been running 35"s for abouy a year, I do not think you will even notice much of difference. I have not. Looks great.
I noticed low end power loss when I went from the factory 265/70/17 to a 35s.. Re-gearing to 4:11s with ARB airlockers are next on the list. I am however running an automatic. Maybe the manual can handle it better.

Maybe you should have bought a Ford and you would not have noticed. Obviously I'm kidding, but I think like with most things you have to spend money when and where you can, I would like to regear however I have long list of money I want to spend. I will get to it eventually

Being the owner of a 6 spd manual diesel with 3.73 gears and 35s I can tell you that I don't have any struggles with power at all. I'm sure automatics are different though.
