DO IT! Honestly, I love it down there, be it the Pacific side or the Gulf, either way you slice it you are bound to have fun. Great food, relatively cheap and friendly folks. I have NEVER had an issue down there. Don't go looking for trouble and you likely won't find any.

I usually use the open road map, USFS 2016 and at times USGS. I have also imported other maps and used an online tool to reference point / set it up to import into Gaia. Time consuming but works. I did a Baja Norte map that was decently beneficial to have.

I notice the auto paths work great on some layers and slim or not at all on different layers. None the less I still like the app and its desktop route planning. As long as your are relatively close to your route on the marking I don't see a huge issue. Gaia definitely takes some getting used to...
