Yep. I custom built mine using cells to fit a specific space, but you probably will be buying a cell/BMS built battery (like Battleborn although you should be able to find cheaper options). Checking out Will Prowse on youtube might be able help out about batteries (and if you want to build one)...
I would love to find some MOLLE Panels that run underneath the seat and the style you have installed. I installed Greyman Tactical panels on the doors and has been great so far. I also use a seat back molle panel with some success, where I keep survival equipment.

Before I started throwing a lot of armor on your rig, really consider if you definitely need it, depending on the trails you intend to go on. You have to consider the weight penalty you will have that may force a suspension upgrade if you get too crazy.

I actually ditched the cooler and kitchen set up out of frustration of setting up, cleaning, and tearing down (not to mentioned extra space). I considered creating a whole "Ingenious collapsing quick setup kitchen" but couldn't justify the weight gain with building everything and the space...
When I bring a cooler its freezing as much of the contents as possible, pre-cooling, and ice packs.
But when you're starting to get up in the higher end coolers you're also getting pretty close to considering upgrading to a lower capacity fridge (given you don't need the space for ice).
Definitely agree on the first aid kit. Myself I'd put together a Beach/Boo-Boo kit that I'd attach to the headrest and then a more substantial kit somewhere else. Might also consider a fire extinguisher (I carry a standard one in the rear and two Element Fire Extinguishers attached under each...
I'm not sure about overlanding in it (the AWD isn't as good as the Bronco Sport Badlands version which is pretty impressive for what it is). However, at its price point it may check a lot of boxes off to make it a compelling second vehicle for home owners. I'm even considering it.
