I have the CFX55IM. Lately I leave it in the truck bed and just clean it out and turn it off. It has an RTT over it so it doesn't see much sun or rain while sitting there. There are holiday occasions where we need the extra fridge space and I bring it in the house.
We grind coffee before we leave. Hopefully make enough. I can do w/o but the wife "needs" it.

If payload is a concern, pay close attention to the sticker on the door jam. My Mojave has a payload of 1101 lbs not the 1200lbs the brochures and online specs give you. I put AirLift 1000 air bags on the rear just to give a little extra support.

Gazelle T4+ Overland Ed. Had the rainfly on due to threat of overnight showers. Not a good tent picture but you get to see the rainfly and overall size. It's big and roomy. Basically 2 T4's. Two big cots and lots of extra space.
