I am planning to do the same thing, but maybe about a few weeks later (I am on the academic calendar). I also have a JKU 2016, and would love to hear your thoughts on campgrounds, gas storage, winch etc... I am leaving from NC and plan to meet family out at MOAB. How are you calculating miles...
I own this exact model from Snow Peak, and think it is very good, packs flat, and much better from than the two other I got from the home improvement store. I think for Overlanding, packability, versatility, and attachments, this is the way to go.
Just left the Jeep dealership where they said that I had a puncture in my side wall, and was told I had to buy a new tire. When I asked to see the side wall hole, the tech said that was about 1 inch from the edge, and thus could not be repaired, or if it was, then would not pass inspection...
The OZ tent does set up much faster, which I do think about after hammering my 18th stake. Also, finding enough flat to pitch it is a huge variable. That is when I think about a RTT.
The material is breathable, not waxed, but does not let rain in. The breathability is one of the best things about canvas, but mold is the risk with canvas. It is pretty high-tech canvas, treated to resist mold and fire. The floor of my particular tent has a very nice and thick PVC bathtub...
What kind of rack did you build? Something along the lines of Gobi. At first thought that was the way I wanted to go, but after looking at the actual removal and what you must do the install, and the real total weight I can put on, plus the degree to which heavyweight way up top changes handling...
My issue is with the weight on the top of my JKU is a rack on fiberglass. Friability can be an issue I think. The AEV, Some Pioneer, & Front Runner all drill into the frame. The Eazi Awn K9 does not, and that is the one I like the most because less invasive, easy off, low profile, etc...
I don't have the stove yet (back order) but I am looking forward to a warm tent. I also wanted to add that the ventilation is very good, as there is netting on all the side walls, making for a great cross breeze. However, the RTT might catch more wind being higher.

Just adding an option to consider for those on the Tent side of this debate. While OZ tent is popular it seems, The Sibley Tent has some advantages. For about the same money you get about 4x the space, it can easily take a stove inside which is nice for winter camping, and is not nearly as long...
Rolf C-P, I think that is especially true with a large volume tent (like where you can stand up and walk around in) which I like when Overlanding. Also, I really enjoy using wood as a fuel source when camping as much as possible.
If you go with a canvas tent (which I did) you can put in a little wood stove. My stove is on order.
