Welcome! The GX470 is definitely a capable rig for some overlanding. Theres a few build thread about them too. I have actually looked at getting one for my wife so let me know how you like it as time goes on!
For me I think the ability to take my vehicle on longer trips is more of a comfort if something like that did happen. Around the PNW the biggest concern is the big earthquake that is supposed to hit us so having a winch ability if needed makes me feel a bit better even though I may never need it...

I think it really comes down to your style of going out. Is it just you or are you going with a group/family? For simple trips look in a single backpacker style stove setup, very small and packable. If you are going with a group then a 2 burner (or more) stove is definitely going to be ideal...
I love the double cab tacomas. Cant wait to see what you do with it. Depending on what you want to do with it the 2" lift is a good amount but I always feel like the tacomas look better with a 3".
Love these dual cab tacoma's. I wish they had enough room for my whole family and I would go that direction. Down the road if I dont go with a new 4Runner it would be a new Tacoma.
Great looking start! If you like that setup you should definitely look at building some drawers for the bottom for ease of organization but love the start!
