I keep a spreadsheet with dates and mileage of all my maintenance, along with all the upgrades and changes I make. Just something I can look back to so I know when I did something. I use Google sheets, so I can access it from my desktop, laptop, phone, and tablet.

If you like the truck, go with it. You can do quite a bit off road with a 2wd. You could put a small lift kit on it with some bigger tires for a little more ground clearance. Everything else would be the same as any other build. Just know your limitations, and have some recovery equipment.
