Well, it's been a while since my last update. Kids soccer, work and family time has slowed me down somewhat.
Let me get caught up with what else I've done with the trailer:
I bought a tongue mounted jack at Tractor Supply and mounted it. I also got a set of LED trailer lights and swapped them...
So, last weekend while in Arkansas, I saw the Camp Chef Yukon on sale for $99 (normally 139) and went ahead and got one.
Now I'm going to try to get a carry bag for it or maybe try to find a plastic tote that will fit it to keep it out of the elements while in the little trailer.

By the way, small world. I was surfing around Youtube and stumbled across your video at the Buffalo River in Arkansas. We used to float there all the time when I lived in Arkansas. Glad you got to experience it, but too bad you were there during low water.
Keith, how do you like this Explorer? I'm thinking of going to REI this weekend and getting one and using it with my trailer I'm building.

Here's mine.
RRO Leveling kit, plain black bull bar, ROLA Roof basket with several LED lights, aftermarket wheels and better A/T tires, Front Runner Wolfpack boxes, Midland CB, and a few other odds and ends.
Future plans include a Wilco hitchgate and RRO Hidden winch system.
The fenders will work the way we relocated them (Look at the pic).
The current axle is a 2k axle. Same axle most other guys using this model have stuck with with no issues. I'm not going to be carrying more then about 500-600 lbs at any time.
The offset of the wheels will remain the same, but...
I finally picked up one of the little trailers around mid-December. I waited a week or 3 and found a welder/fab guy just east of Atlanta (David Dial at Dialed-In Fabrication on Facebook.) that would do some of the more in-depth work for me. I had him extend the tongue 18 inches, add a 2 inch...

I, too, have a WK2 I'm slowly building.
I went with a ROLA roof basket. It looks good, functional, and didn't sink my bank account.
Only thing I'd like to add to mine is the RRO hidden winch system/Chief front recovery hooks and maybe some more lighting...
