I can help you out, been planning a trip near there myself, and have been in that area multiple times.. how many days are you spending in the area? do you have some pre-determined sites you want to see? I've attached the camping restrictions for the Kaibab National Forest .. Demotte Campground...
It is pretty safe to plan about 10mph average on those dirt tracks, so figure that into your timeline.. and possibly a side jaunt for fuel and snacks somewhere... I'd highly recommend taking a day to visit Kanab (there are some really cool sand caves and slot canyon called Peekaboo by the locals...
I echo the comments above.. but also add that the gear you take is going to need to be specific for your style of overlanding.. there are so many options and applications that will work for some and not for others.. that being said.. for starters, address the basic needs with something you can...

So.. this would be my recommended route.. there are lots of trails around, but not many that will get you from point A to B in this portion of Utah.. something about huge red rock canyons and winding rivers that make non-pavement travel less than productive.. that being said.. your specific...

05 Toyota Sequoia Overland Build
Peekaboo canyon by Kanab, UT. Buried when we had to stop abruptly to let someone going too fast go by..some quick shovel and traction bar action and we setup camp before dark.
I have the parts to extend the rear, just haven't had the time. I will run some 3/8 tubing from the rear up to the Fuel fill area, and put a stock breather on the end of the tube. I'm going to extend the center and tie it into the front, then extend the front diff breather up to the firewall...

I have thought about it.. the summer is kinda busy, I may re think things come winter, especially if I need some projects to keep me out of trouble. I'll keep you posted
Yeah we'll be camping until Sunday.. I'm still working out the details of our camp spot with @Cendee. I texted Michael to see if he was going to try and do Overland bound area like he did last year but haven't heard anything..
