Gators aren't a problem at all. I bivvy'd all of the Florida Trail. No tent usually. Just don't set your bivvy on a muddy riverbank and proceed to snore like a toad croaking.
I'd do a L rack, and a Bundutec RTT on a Taco. Small roll out kitchen. Forget about the nice cargo slides, and store cargo sparingly. Taco's can't carry much.
