I have the fortunate privilege of being able do a little overlanding on a daily basis...blacktop overlanding as I call it...

I keep a cook setup on the truck. I can cook my soup, and boil water for dishes afterwards. This process only takes a few minutes to do and saves cash.

Another benefit to this is all the practice I gain in the simple setup and prep of a meal on the "trail". For beginners, this can be a bit of a struggle. When you've done it for awhile you tend to forget how you started.

That's great. I do a lot of backpacking as well, and dehydrate my own meals. To experiment with which ones work well I take my various concoctions to work and have them for lunch. Agree that being comfortable with your setup is a valuable.

I agree light weight gear makes life simpler
thats why I love VT, I can pull off almost any road & theres a Class IV to explore
