Needed fresh catfish filets, milk, cornbread mix, salt, pepper, peanut oil, a pot or deep skillet to fry in, ziploc bag large . Cut up catfish into chunks or filets put them in ziploc with milk overnight or early in the morning to cook at dinner the filets need to soak atleast 10 hrs, remove from milk bag and roll in mix of cornbread mix salt and pepper, fry till golden brown and enjoy.

Why the milk soak? What's that doing for the fish? (Not a lot of catfish experience here.)

It takes any fishyness out of it and gives the cornbread mix something to stick to. Id imagine the milk trick would work with any fish to take away fishy flavor and i do it with chicken tenders to get breading to stick

The milk trick works with other meats too. I use it for Sturgeon, Goose Brests, and more. A friend uses it with his fried frog legs! Benz.
