Quick and simple favorite side dish of mine.
Peel and cut yucca (cassava)

Boil yucca till soft. Degree of softness is a personal preference. Presents better a bit firmer, I prefer mashable

Remove inedible vein, drain, put aside

Sauteed onions and garlic in oil of choice

When soft add yucca and stir, allow to cool and enjoy with your favorite protien or alone. Some add lemon juice at the final stage. I did not for this write up as I had none left. Be warned, though tasty lemon will add a green tinge to the dish.
