We use these things in areas of the shop floor that can be high temps, or corrosive to monitor equipment parameters.

Have you looked at the Raspberry Pi platform? Not sure what your computing requirements are, but the Pi is about 1/10th the cost of the NUC.

Raspberry Pi's were looked at, but they weren't ruggedized, nor could the engineers figure a way to make them work without 32GB or RAM, and dual nics. We still have a couple kicking around the shop, somewhere. The company I work with either wants something for free, or to spend $3 million on something that doesn't work. No middle ground.
