Compromise with the Honey and overlanding will be pleasant for the whole family. Now and then, I do research a place for my wife to get involved well.
Hot Springs, Arkansas is the place. With bathhouses and pampering, wow! I scored big.

What have you found less interested spouses enjoy doing during the drive, though? Any recommendations?

Good question. For me, i have asked her to make a playlist for music listening. Also, bringing her favorite magazine or reading material. Then, when things really get boring for her, create a meal list is good.
Navigating is also a tip for her to do, but only if that is interesting to do.

One of my wife's interests is family history/genealogy. We include stops to places like cemeteries where she can look up ancestors or take photos for find-a-grave. In general, I involve her in the planning before we leave so there are stops to look forward to, which helps for the kids, too.

While riding along to prevent boredom, she likes reading, audiobooks, writing in a journal, and naps between points of interest.
