Driving off the tarmac in France is widely available for now, although "off road" leaving the trail is illegal with some quite expensive fines.
I have been living and driving in France now for 23yrs with 4x4 and motorbikes if you follow the rules and you are polite and discreet I personally have never had a problem.
There are some organisations here to promote the use and protection of the network of green lanes, trails or chemins in french. The most effective and active organisation at the moment is "codever" who encourage the mentality that the trails are for everyone therefore they represent all users. It's an annual subscription but provides legal representation in case of litigation.
