direct or indirect is my way of cooking whether @ home, non dispersed camping or disperse camping. I use no propane or gas when BBQ'n or grilling.
Home I have 2 stick burning pits both built in Laredo Texas (1.) 20" round offset w\ thermostatic blower fan & the other is a vertical cabinet style on a trailer stick burner pit w\thermostatic blower fan.
Camping I use a 18" Weber Smoky Mountain cooker. I like versatility of this cooker because of ability of smoke BBQ'n or break it down to a grill to grill them T Bones & venison steaks. It holds 14lbs of charcoal for a 12 hour BBQ cook, were my 2 home pits I can cook as long as 16 hours (w\o sleep) as long as I continue to feed them wood when BBQ cooking 14 lb beef brisket .
