How many of you cook directly on coals? Or just off the coals on a grill? The thread on plow discs/skottles/woks got me thinking about this. I've never done dirty steak (cooking directly on embers of a fire), but we've cooked pizza on a Weber and now a Big Green Egg for years. Next time we go camping I'm totally doing a pizza over campfire coals on the low grill we have. Pictures of pizzas done on the Egg: IMG_1280.JPG IMG_1289.JPG

direct or indirect is my way of cooking whether @ home, non dispersed camping or disperse camping. I use no propane or gas when BBQ'n or grilling.
Home I have 2 stick burning pits both built in Laredo Texas (1.) 20" round offset w\ thermostatic blower fan & the other is a vertical cabinet style on a trailer stick burner pit w\thermostatic blower fan.

Camping I use a 18" Weber Smoky Mountain cooker. I like versatility of this cooker because of ability of smoke BBQ'n or break it down to a grill to grill them T Bones & venison steaks. It holds 14lbs of charcoal for a 12 hour BBQ cook, were my 2 home pits I can cook as long as 16 hours (w\o sleep) as long as I continue to feed them wood when BBQ cooking 14 lb beef brisket .

BBQ'n (long cook times)
Pork I like cooking over split charcoal & split hickory
Chicken I like cooking over charcoal & Pecan chunks
Beef I like cooking over a combination of split Red Oak & split Mesquite logs
Turkey I like cooking over charcoal & split Red Oak logs

Grilling
Charcoal only

Beautiful stuff Don. And the plates bring a tear to my eye - similar to the ones my grandmother, originally from Kentucky, used as I was growing up in Ohio. And you've got your wood dialed in. We're not big fans of mesquite and prefer more pecan and apple for smoking. Love the slow cooked BBQ. IMG_1753.JPG
