When I'm out trying to enjoy Overlanding, I typically aim to travel no more than 500km (300mi) even with the distances in Australia.
Obviously less, if the road is rough progress is slower.
If I travel all day one day, I will usually stop for at least a full day (2 nights).
Take time to enjoy the outdoors.

Something that can help, is try and find videos or trip reports of what you are looking at driving. That will give you an idea of what conditions are like (be careful though, if the video is 5 years old the trail may be completely different).
When I am traveling back east I to see go as fast as is safe. (there and back)
However, since I started doing multi-day trips in the back country, I have slowed down. I have a trip planned for bringing back my new vehicle from the dealer in Nampa ID and I have allowed 6 days to get from there to Denver (my BL lives in Aurora.).
That is pretty slow progress and doesn't include getting back to ABQ.
