So, I've checked shipping cost and it's just outrageous. This unfortanetly leads to make this an in-person only. I'm happy to go on a roadtrip in California to bring it closer to you, but it looks like shipping is near impossible for larger items and private persons these days.

Makes sense. I'm very happy with the Kickass Travel Oven for my usecase. It takes forever, but I don't care. It runs while I'm driving, or I start a cook when I get to the camp and have dinner later. It just works for us.
The two problems with this is: it's MASSIVE, very large compared to the simple travel oven (e.g. Kickass) and it is massively complex. Run this thing over a few thousand miles of corrugated roads and you can probably open a new Fry's electronic parts store ...

You now have enough power to do other things as well. We boil water with an electric kettle, use a 12V heater fan to warm the water and battery compartments when there is a chance of freezing temperatures, indoor and outdoor lighting etc. Also, charging eletronics...
I'm using induction cooking and I'm never going back.
But, and that's a big but for some folks, there are certain circumstances that make induction cooking perfectly viable:

I would avoid any American truck except the Ford Ranger if you’re going outside of the US with it. But that might just be me, who doesn’t want to either look like a rich American or a drug dealer in other countries. At least get something old and beat up looking if it has to be such a big truck...
And make sure you can get a carnet de passage if the vehicle is registered to an LLC. And be aware that a Carnet in the US is about $2k, 8 to 10x the usual price in the world.
