I would run with the oem recommended. Unless you have a highly modified diff with custom bearings etc.
I run lockers and gears in mine and oem weights are fine.
As far as brands, that's a bag of cats discussion :)
I personally have always run Valvoline.
You're right near a lot of great options.
Check out Tackett Creek area just north of you. A little more north into KY to the Daniel Boone NF, or south to Tellico plains areas.
Windrock is a great OHV park.

Slid sideways onto a tree when the hillside surface gave out. 26 degree off camber, by myself, and not enough block/pulleys to pull sideways. Just had to drive off of it :/
