Never been to the springs themselves. It's a scenic drive(or bicycle ride) when coming from the Hollister side. Spring green and wildflowers can be amazing. You can get there from the South through Gilroy I think, and New Idria. Panoche has a bar/deli, or it did have before the pandemic.
