Hollister is a great place for the beginners to advance, been there many times and makes the perfect day trip. I might be heading up there next week to test my new front gears.
This was shot on the peak of Hollister on my last trip there.
The only real difference is the tire size is.5 of inch taller so I doubt you will not have much issues.

The BFG Rugged was a stock tire that came on Taco's and heard it was a decent dd tire but for heavy snow not sure how they perform.
Honda Pilot tires size stock is P235/70R16 so your going one size up, will a bigger tire fit without rubbing? Probably under dd normal load not but with a larger...

I run GY Duratracs personally and on my 2nd set, been through all conditions with no issues. But Duratracs are more on the aggressive side not really the perfect daily driving tire in my opinion.
I been running a Uniden Pro 520XL which is one model up from the 510XL but almost the same size for years and its great for close comms especially since it has the ( 520XL )RF gain that you can turn down if your one truck away from the person on trail.
I been in sand, mud, snow and wet driving conditions and the Duratracs handled everything well, but your choice GY Wrangler Trailrunners is a great AT tire.
Check the Buy Sell Trade Rig section on the forum, lots of nice choices that will probably fix all your needs. Also have a buddy in Socal who listed his built Tacoma recently.
Have tired a bunch including Coopers STT, Toyo Open Country MT, BFG KM2 and Finally overall best I used GY Duratracs which I am on my 2nd set.
Each had it's good and bad for my experience, but everyone has there own preference.
