just running some of the fire roads and back roads will be fun. Edgemont/Mortimer is the middle of the area. you will pass Brown Mountain OHV area heading toward the Mortimer area. Stop at an OHV permit station and ask for maps and advice.
I also found with my 10 ply I knew when the pressure was low because the truck had to push them on the road and the mileage went down a noticeable bit. I get that less with the c rated 6 ply.
look at my postings for Old NC 105 and Mortimer/ Brown Mountain Beach road. There are pull off camping spots in several areas, and a national park campground at Mortimer. I have not been on Richland road, no idea on that. The fishing is good in the mountains so bring a pole.
You can camp along the road, there are several pull off for that. How specific do you want for directions? Take NC 126 out of Morganton NC, you will come to a hard right turn onto Old NC 105. Let me know if you need more directions than that and I can try to help you as much as i can.
there are lots of pull off camp sites along the road. They are pretty close to trail heads. Most mountain bikers use the main roads, but you can cross the numerous gated fire roads and ride I am pretty sure.
