I have never done overlanding or outdoor camping in snow. I would like to find a place to do these a couple of hours from Asheville or Gatlinburg the week of Christmas. Will I be able to find driveable snow in a national forest somewhere in that area during that time? If so, I’d really appreciate some suggestions. Or, is that still too far south?

Still too far south for that time of year in my experience. I’m from western North Carolina, currently live in Ohio, and I make the trip back to see family every year the week after Christmas. I went through decent snow in Cincinnati maybe once in the last 6 years, and I haven’t seen anything coming or going down the WV route. Measurable snow doesn’t seem to hit until January or later these days.

My wife and I are heading into Kentucky to explore some of the Daniel Boone area. Weather forecast has snow showers for 12/19 - 12/22. Temps in the 30's / 20's. That's as far out as the forecast goes for now. We are leaving Burnsville, NC Early Friday 23rd. Travel from here is about 4 hrs.

That’s a thought and well within range. I see that the RedBird District has most roads open in the winter and the Cumberland District seems to have about 50% of the roads open. I am assuming with an inch or two of snow that they are still drivable.
