You sound like me... almost all the way down the line. I like to use Knorr rice side and add the meat, canned corn, and the diced tomatoes with green chilis; makes for a nice filling meal. I also freeze some of these to take "camping" for a quick easy meal when out. The Knorr side with red beans and rice makes for a really quick jambalaya with a little andouille sausage and diced chicken. And the instant potatoes with ground beef, a little peas & carrots makes for a nice little shepherds pie. Not a big fan of the Spam thing though; too much of that growing up.this is my specialty...
i usually start with a good starch base, such as rice, macaroni, potatoes, etc
so say you have rice. cook it and then add a can of Rotel, some kind of bean (ranch style, black beans, etc) maybe add some kernel corn and a meat...even a canned meat like SPAM is fine. cook that together and add seasoning you like and you have a meal. get fancy and put it in a tortilla and add cheese. if there is any left overs, add an egg in the morning and make a breakfast burrito out of it.
one camp meal i make a lot is to fry up some SPAM cut in small pieces and add to rice, Rotel and black eyed peas.
cook up mac and cheese and add Rotal and SPAM or a can of tuna.
take ranch style beans and put on a baked potato and add cheese...BAM!
take corn tortillas and tear into little pieces and brown them in a skillet with oil...remove. cook some bacon and add it to some whisked eggs and mix in the browned tortillas and add cheese and put in a skillet and it is a hybrid quiche. that one is pretty damn good!
instant potatoes with corn and a jar of gravy and hamburger or chicken meat....like the KFC bowls
there is a LOT. my oldest is in college and i have taught him how to cook good with $10 and a trip to walmart or dollar general. he has mastered that and even taken it to new levels with ramen noodles and other items...

I couldn't tell you i cook with alchohol more than drink it. Id imagine it might but not sure, try it.Will the beans de-gass if you cook and eat them while drinking the beer?
