Easy but scenic trails in Colorado and Utah off Hwy 70 or Hwy 15?

Planning a getaway to Colorado and Utah in the very, very near future! We'll be riding out on Hwy 70 to Hwy 15 and would like to do some relatively easy trails right off the highway (within 45mins of Highway) but also offer some epic views. So far we have planned to get off near Moab UT and ride around Arches National Park. Seems like there is some easy to moderate trails there with some good scenery. We've also plan on getting off highway 15 around Parowan UT and get on a trail known as Sage Valley. If you know of even better spots around or in between those two locations please let me know!
Also if you're interested in doing a group ride, please feel free but be aware that we are just planning 2-4 hours of ride time per area and not camping, and with traveling such distances we will not know the exact time of getting to places but we can text or call to keep you updated. We'll also be filming for our youtube channel "All Points Overland" so just be aware we'll be stopping a lot to set up cameras. We don't have a drone so if you have one it would be epic to get some drone shots of our travels too.

Well just by luck with 70 shut down due to mudslides we ended up on Cottonwood Pass which was a scenic yet easy road in Central Colorado!
