Check out Martha Sundquist park/forest or Cherokee. GSMNP isn't going to have any trails other than a few unpaved roads. Rich Mountain road in Cades Cove is a gravel road that leads out of Cades Cove.
HAM is the best option because you have so many choices and can learn how systems work. CB or FRS are very simple and cod be used by anyone.
I run ham but carry a cb for an alternate.

How was Casper? I went out to Arminto to view it but ran into a 4 hour delay on 20 so I did more back roads into Thermopolis. The eclipse was awesome!
