Desert Valley Overlanders has an active FB group which advertises (monthly?) meetups. I live out of town (Socorro), so have never been to one, but they seem well attended.
In my F150 with a level & stock tire size it was easy but slightly scary in parts (wheels close to the edge etc.). We had a scrape occasionally, but I think in a shorter/narrower rig even that would probably not happen. It's beautiful, go for it!

I've only done the section from Chloride to Reserve. Are the sections of low altitude travel short enough that you can always find a place that's cool for camping even in the summer? (Say above 7k').

We've had it for 14 months or so now. We're in New Mexico, so the same basic sun situation as you (we leave the tent mounted and the truck is always outside). Maybe it's a bit faded, but its kind of hard to tell between the dust and the pinstripes :-) Aluminum would be more durable no doubt, but...
Extremely happy with iKamper Skycamp. Very fast setup/breakdown, and very roomy. Main dislike is that there's not enough room to leave our (bulky) bedding in the tent (works for some people, not for others). I find the stock mattress comfortable, my wife doesn't (so we got an Exped Megamat).
I've been camping with a CPAP for a few years. It's most efficient to run off of DC, but beware that sometimes it will be assuming lead-acid voltages, not Lithium, which means the CPAP will stop operating much sooner than you expect. (You can usually get a regulated cable to solve this...
Propane. My old (35 years) Coleman propane camp stove also works fine at that altitude (and a bit higher). I didn't know it wasn't supposed to work :-)
We use the Cleanwaste system (aka PETT) bought from REI and find that it works very well. Even if you think you will likely be able to find toilets, it removes some stress from worrying about it.
I believe ARB elements fridges are spec'ed for being in open beds. Anecdotally a lot of other fridges seem to survive this, but I imagine you void your warranty. I'm thinking of moving my Dometic to the truck bed (under a RTT, so it will be out of the rain and direct sun, but not out of the...
It's maddening that some people place the health and welfare of their staff and local community ahead of your desire to turn a global emergency into a nice vacation! (And yes, I'm going to lose my trip to the Maze district, so it affects me as well).
