I like tall, skinny tires they work well in almost all the off roading I've done on the last 50 or so years. I have 2 different tires I run on my Willys. I have a set of 34-9.50 x 15 Super Swampers for mud and a set of 33-10.50 x 15 BFG KO2's for the other 90% of my driving.
Nice job, looks good too. You might want to put some rubber bumpers over the nuts to keep the tank from rubbing on them.
I used one of those mounts for the nitrogen bottle in the back of my Willys. My local gas supplier had an "old, rusty" one out back and just gave it to me, a half hours work...
I don't think cast iron has more upkeep than anything else you might bring along. Just wipe it out, oil it and put it away.
If your cast iron is oiled and clean you shouldn't have any problems with the elements. I rinse, wipe and oil mine turn them upside down on my table and they wait until...
I took an old cigar box and put any extra $5's, $10's, $20's or even $1's in it when I had them. It took a while but I had most of the money saved by the time I found a good deal on the one I wanted.

I like the way you think, like you cell reception around here is faint or non-existent and I know of a lot of places with no GPS at all.
I have a lot of maps and a couple of compasses in my rig when I go out.
