Sounds like fun. If I didn't already have a trip to UT/WY/MT/SD planned in May, I would consider joining you. The only time I Spent in/near Cherokee was driving along the Cherohala Skyway on my way to a drilling job at the TVA Appalachia Dam back in 2012. Absolutely beautiful area.
Either way, OP, you can't go wrong with either. A SR5 with ATRAC will get you out of most situations, a TRD Off Road with read locking differential and crawl control will get you out of a few more. It all depends on what you intended uses are. An SR5 is incredibly capable out of the box...

That's a bummer about your first X, but glad you found another. Are you able to strip all the aftermarket parts from your first one, including suspension?
