I run Cooper STT Pro 35s on my JKU and AEV suspension. If I recall AEV recommended 28 pounds but I run 32 normally for road use and have 35k miles with no issues.
Welcome to the group from one Eatern Iowan to another (though don't live there now). We actually drive by Grand Mound often when heading back to the farm. The project looks like it will be a very unique rig once you have it done!
What part of August are you planning on going? We will be in the area week of the 23rd it looks like and were thinking of doing Imogene, Ophir and maybe some others. I would love Black Bear as well but don't have a lot of mountain trail time so hesitant about doing that one right out of the box...
@Road have you tried the Firebox G2 (or smaller one)? I think these are really nice stoves, although make sure you get the version made in USA, I do think it is better made than the Chinese one offered in the kits.

After reading the background on the color of our 2015 JKU which is Anvil I dubbed it The Trash Can. Wife doesn't care for it so it has become a loose affiliation.
We are tent campers which makes a difference for sure. We both use inflatable backpacking pillows, my wife a Sea to Summit and I have a Nemo (her's is slightly more comfortable) and both work great.

I have a 424 along with he Powerhouse stove. It would hold the weight and sized to hold two 10 inch pans if I recall correctly. That being said if I were using a dutch oven only over the stove I would likely not go with cast iron. This is not a knock and if you have watched any of my videos you...
I use an old copper flame tamer in the bottom of mine, but I would think any ceramic tile would work, especially if it is rated fire resistant or proof. The tiles are fired at over 1000 degrees so I would not think that there is any issue using them as a heat shield on the Coleman Stove...
