I managed to find some 3/4 inch rigid foam insulation board today. I had to call several places, but found some with an R5.6 rating for the side walls. Ordered it, and they'll call me when it comes in. Friday, I start dry fitting, staining, and poly coating the interior pieces.

Have you thought about building the rack to be height adjustable? If you use linear actuators, raising and lowering is as simple as hitting a button.
